The Canadian Beaver Book, published in 1991, had everything you’d ever want to know about beavers in it, including how to cook them.


1. Beaver ’n batter: thin slices fried with bacon drippings


2. Barbecue beaver: with your favourite sauce


3. Beaver and onions: with onions and bacon


4. Beaver tail soup: cubed, and boiled with spices, onions, celery and carrots


5. Beaver burgers: ground with bacon, onion, eggs and breadcrumbs, fried in patties


6. Beaver liver and pancakes: soaked overnight and fried quickly


7. Beaver and beans: boiled, then sliced and fried with beans


8. Beaver meatloaf: burger recipe with tomato soup, cooked in the oven


9. Boiled beaver: with carrots and onions


10. Beaver in sour cream: fried beaver pieces baked in sour-cream sauce


11. Baked beaver cutlets on beans: brown cutlets baked on top of beans, covered with mustard, ketchup, brown sugar and onions


12. Deep-fried beaver bites: strictly Canadian
